Mexican Street Corn
Corn tortillas filled with fried pork belly topped with fresh cabbage, elote* salad and finished with a poblano cream sauce. Choice of individual tacos or platter with baked beans and Spanish rice.
*Elote: A classic way to enjoy corn on the cob is Elote Mexican street corn, Elote. Roasted over an open grill, it's then coated with salt, chili powder, butter, cotija cheese, lime juice, and mayonnaise or creme fresco.
